INGREDIENTS:
  • 1 baguette, about 20 inches long
  • 1/2 lb. manchego cheese
  • 1 large clove garlic, cut in half crosswise
  • 2 ripe plum tomatoes, cut in half cross wise
  • 3 tbsp. high quality extra virgin olive oil
  • sea salt
PREPARATION:

Preheat oven to 325 degrees F. Cut bread into slices 2/3 inch thick and three inches long; place on baking sheet. bake until lightly toasted about 12 to 14 minutes. Meanwhile, slice cheese thinly into triangles so you have at least on triangle per slice of bread. Remove bread from oven and rub garlic on same side, coating bread with juice and pulp; discard used garlic, then cut with olive oil and season with salt; top each with tomato slice and cheese.
