When it comes to making dinner, let's admit it: we don't always have all the time in the world to make a healthy, delicious meal. Often, being busy at work (and in life) keeps us from making the healthiest choices, and eating out can take a toll on our waistlines. Luckily, these days eating in (and cooking) has never been easier thanks to services like HelloFresh, who make cooking a simple and fun task by delivering delicious recipes and fresh ingredients straight to your doorstep.

We fell for the Stuffed Chiles Rellenos recipe right away, since this is no ordinary stuffed pepper! The combination of the spicy meat and spicy tomato sauce with the rice and cheese make for a filling meal. That's why we were surprised to find that each pepper is only 561 calories! Tell us: is there anything better than an easy-to-make meal that is also low in calories? We didn't think so.

Coffee Rubbed Carnitas Tamales with Salsa Verde to Celebrate Dia de la Candelaria!
Coffee Rubbed Carnitas Tamales with Salsa Verde to Celebrate Dia de la Candelaria!
By Irina Gonzalez | 02/02/2014 - 10:00

Today isn't only Super Bowl Sunday, but it's also Dia de la Candelaria. This special holiday is a Mexican Celebration that's actually a fusion of Catholic influences and native Mexican tradition. Today we celebrate with friends and family, filling our lives (and bellies) with tamales as we devote to the Niño Dios (Baby Jesus)!

This increcible recipe, featuring coffee-infused carnitas, comes to us from Chef George Duran and IMUSA. Using the IMUSA pressure cooker (available on Target.com, $54), making irressisible carnitas has never been easier. The recipe from the author of Take This Dish and Twist It is, in our humble opinion, the best way to spend a Sunday afternoon filled with love and laughter, family and friends and, of course, plenty of tamale-filled bellies.

Ingrid Hoffman's Mexican Pork Pozole for Dia de los Muertos
By Irina Gonzalez | 11/01/2013 - 17:10

For the next two days, families are gathering to celebrate Dia de los Muertos by remembering friends and family members who have passed on. And along with the classic sugar skulls--food plays a big role. Ingrid Hoffmann, host of the Univision’s Delicioso and author of Latin D'Lite: Delicious Latin Recipes with a Healthy Twist, shares her favorite recipe for Mexican Pork Pozole. The hominy-based stew, usually made with pork shoulder, is also perfect to warm you up this time of year.
